Gallbladder tests coming back normal.....?

It's very likely that your GB is just not functioning properly. The ultrasound could show no sign of stones, sludge, etc but that doesn't mean that your GB is working right. The HIDA scan will show the actual function, so you'll have to wait and see those results.
